A lipo will last for x number of cycles before it dies.
What is a cycle? Is it:
1. full discharge to minimum 3v / cell then recharge
2. partial discharge then recharge
3. topping up
4. all of the above.
A cycle is discharge then recharge, also partial discharge then recharge.
But I wouldn't worry too much about what manufacturers declare as number of expected cycles.
If used regularly and at the limits of the specs I found that LiPos last about one and a half years.
I got my first kokam 1500s in February 2004 and flew them regularly ever since. I started of with 15 cells assembled into 3s packs now I have 9 left which have about 1000mAh capacity and the voltage drops faster under load. I grilled 3 cells and the remaining 3 were destroyed in a crash.

Do Lipos degrade over time even if you don't use them?
Yes they do degrade even if not used. If you don't use them for a longer period of time keep them at about 3,7V/cell
