Without running out at midnight to take down one of the many "Lose Weight in 1 Day!" signs popping up all over the place, where can a person buy Coroplast? None of my LHS have it. I need to make some new winglets, stabs, and other pieces. I called a couple craft stores and the person on the phone had no idea what I was talking about. Lowes?

Yeah, Find you a sign shop or you can get a bunch of buddies together and order some 4x8 sheets from harbor and some states it will be free shipping as they freight it in. Have a heavy pallet to deal with but you won't have to pay a cut charge or ups.
Now, I am not sure since I haven't ordered any since spring if it is free freight here but you can check.

Call a sign shop in the area and explain what you are doing and what size you need. They may have scraps that they'll give you. Also, if you are buying full sheets, they may charge you less when they realize you are not a competing sign shop who ran out of stock.
When purchasing a full 4 x 8 sheet of coroplast, be sure to choose a sheet that's at the top of the stack. The rigidity can be compromised by the weight of the other sheets over time. Also, look at the side of the coroplast sheet and into the flutes (the little squares). Ideally walls of the flutes should be at right angles and not show signs of being crushed or stresssed (especially if you're paying for it).
Good luck!

We store ours on their sides. Try not to keep a lot in stock but if it is it is usually in 4x8 sheets.
The biggest expense in this stuff is the shipping.
Here we don't have to pay freight when we have it trucked in. So we can sell a sheet 4x8 4mm for 12.00.
If we have it cut then we have to pay UPS freight.
Just some inside information

Actually found some at a small sign shop in the same plaza as the LHS. They will sell me their small pieces for $5 for a big box of them or I can get a 2x4 sheet for $4. They said I was the first modeler in there. I'll have to let the others in the area know about them.

What thickness would be appropriate for stabilizers / ruddervators on HobbyZone pod/boom plane?

Ive built alot of spads, 4mm is by far the easiest to find locally,Ive paid anywhere from $8 to $20 for a 4x8 sheet. 2mm is the hard stuff to find and costly to ship unless you have them cut it down to 2x4 sections.Harborsales or Regal plastics carry 2mm and dont order it online, call them to place orders because they'll charge you an arm and a leg with there automated shipping calculator.
Coros heavy, so to make one light as possible you almost always need 2mm to make the wings out of and 4mm for tail feathers. My typical 4mm 48" wingspan plane using pvc downspout as a fuse weighs in at about 7lbs rtf.
