Cutting down advice

I have an old, dead Zagi 400X that I got for free. Its got a horrendous tape job and its nose has seen better days. I wanted to play around with cutting down a wing and seeing what happens. Where is the best place to remove width? Since the nose was dead, I was thinking cut it down the middle and take a few inches off ea side and glue it back. Would it be better to cut off the ends of the wing instead? A little off both the middle and the end? Whats the shortest width I can go? I was thinking of going from 48" down to 42" to 40" to start. One last question - once its back in one piece, is there a way to find out the new CG?
