At what percent do I charge
 
Flying under normal condition at what battery percent do I say it's time to charge

Appx 20% remaining in the pack... for best pack life.

Draining it to 0 useful charge left (appx 3.0 v per cell at rest) will damage the pack. I aim for 3.5 v/cell at rest. (usually between 3.0 and 3.4 v/cell LVC setting, depending on the model)

Yes, 20%-25% capacity remaining is is the general guidance for where to stop.
Most people agree that 20%-25% represents a voltage of about 3.7v per cell with the battery at rest. 3.5v is generally seen as a fully depleted battery. After 3.5v the voltage basically drops off a cliff so there is virtually nothing to be gained by running down the battery any further.

Running below 3.7v wont do any harm occasionally but try not to go much lower very often.
