Do you know how many watts your pulling. Flight time is easy to work out

capacity/amps*minutes. asuming a draw of
3/30(30amps)*60 = 6 minutes flight time

Given you're landing at 5 minutes...

Captain, Do you know many watts the mptor was pulling previously. When you put a new ESC in chuck the wattmeter on again and see what its says.

The battery should be up to the task. ESC might be losing timing with the motor. What ESC are you running. If its powering down rapidly i doubt its the battery because you would expect to hear it...
