What I want to do is put those bits in a new plane, preferably a MiniMag. I'd like to know how easy this would be to do?

I feel your pain
I cant comment on the minimag but a while back I bought a P51 from them that never flew right either.I was able to take out all the electrics & I put them in a simple stick.they worked fine in it...Good luck
