I have a Parkzone T-28 running the stock 480 motor (not the more expensive Eflite 480 - this version simply has a "black housing" and no other specs listed)
I replaced my ESC with a turnigy 40A and am programming. I have a selection of timings: low, med, and high. Which do I use, and what is the consequence of a wrong choice?

Start with low timing - only a few very high Kv motors benefit from high timing.
It won't hurt the motor, no matter which timing you use - high timing might extract a fraction more power from some motors, at the expense of more heat and higher amp draw.
